Creamy Summer Papaya

In summer, I love to indulge in a bowl of fresh, ripe, papaya chunks for breakfast after a long bike ride. Papaya has many great benefits and I want to share with you a savoury recipe to enjoy this amazing fruit. Try this easy-to-follow steps and enjoy on a hot summer afternoon!


Ingredients:

1 ¼ tablespoon of coconut butter or oil

1 medium ripe papaya, cut in cubes

2 large celery stalks, chopped

1 small onion or green onion, minced

2 tablespoons freshly grated ginger root

1/3 cup unsalted dry cashews

2 teaspoons sea salt

2 cups of vegetable broth

White pepper, cumin, paprika to taste

2 tablespoons of fresh cilantro

½ cup of creamy coconut milk

Sunflower seeds for garnish



Directions

  1. In a medium pot, on low heat, add the oil, papaya, celery, onions, ginger and cashews and cover pan. Leave on low heat for 10 minutes, stirring occasionally.

  2. Add the vegetable broth, 3 cups of lukewarm water, salt and spices; mix well.

  3. Cover and bring to a boil.

  4. Once boiled, reduce heat to a medium-low simmer, uncovered until papaya is very tender; approximately 30 minutes.

  5. Once cooled, puree mixture in a blender.

  6. Return to pot, on low heat for another 5 minutes.

  7. Add the coconut milk and mix.

  8. Garnish with cilantro and seeds to serve.

Remarks:

  • For best results, pick a ripe papaya, yellow skin, gentle pressure to the touch.

  • Because of the presence of the "papain" enzyme in the papaya, the cream may not keep well: prepare and eat it right away.

Morning Smoothie


Blend frozen papaya, mango, banana and some kale or spinach into a power smoothie, add a scoop of vegan protein power for extra benefits.


Another great use for papaya is to brighten your skin. Using a chunk of ripe papaya, smash it with a fork or in a blender until you get a paste consistency. Put on face, covering skin spots with the paste. Leave it on the skin for 20 minutes. Rinse your face with warm water.


Experts agree that this incredible fruit is a powerful source of vitamins A and C. Furthermore, the fruit is indispensable for vision improvement and strengthening of the immune system. The vitamins in the papaya can be converted into beta carotene, a great antioxidant essential to combat free radicals in the prevention of the formation of cancer cells. Being a low-calorie fruit, rich in potassium and folate, papaya is also a great nourishing ingredient for a strong, healthy digestion.
